小蕃茄櫛瓜麵 / Cherry tomatoes zucchini pasta

下雨天的午後,一時興起煮了一盤滿滿季節感的麵,超級超級好吃到我必須馬上寫下來:)

三月底四月初,小番茄漸漸淡出產季,大蒜開始採收,這美妙的時間點他們會在農夫市集重疊相遇,太幸福了,我可能會烤一堆小番茄乾起來讓整年都可以吃到這個麵

小番茄乾一大把 > 應該是20顆小番茄烤乾的量,下次再仔細量給大家

櫛瓜大的半根

大蒜 2 瓣

植物肉排1塊 (今天用beyond meat)

義大利麵 2人份

萊姆皮一搓

//作法//

0. 煮一鍋水加入一大匙鹽,水滾下麵,下麵後開始炒料

1. 熱鍋熱油,把植物肉排弄碎炒一炒,加一些鹽,炒出香氣到微上色

2. 加入小番茄乾、一點煮麵的水,微燉一下到小番茄乾爛掉

3. 加入大蒜、櫛瓜

4. 麵此時差不多熟了,瀝乾水倒入炒料那鍋,再加兩匙煮麵水,讓醬汁微收乾進麵裡

5. 盛盤前加入一搓萊姆皮,清香味爆發

6. 大吃特吃

On a rainy afternoon, I cooked some seasonal pasta on a whim. It was so delicious that I had to write it down right away :)
At the end of March and the beginning of April, the cherry tomatoes gradually fade out of the season, and the garlic starts to be harvested. At this wonderful time, they will meet at the farmer's market.  I may dry a basket of cherry tomatoes and enjoy them all year round. 
Always love to have both of them on my plate.

// Ingredients //

dried cherry tomatoes > made from 20ish cherry tomatoes

half of zucchini

two cloves of garlic

plant-based patty > I use beyond meat today

pasta for two servings

pinch of lime zest

// Steps //

0. Cook the linguine in a large pan of boiling salted water according to the packet instructions.

1. While cooking the linguine, you can start to stir fry the ingredients.

2. Add the plant-based patty and stir fry it until the color slightly turn brown.

3. Add dried tomatoes, some pasta water, simmer for a while until the dried tomatoes turn soft.

4. Add garlic and zucchini.

4. The linguine is almost cooked at this point. Drain the water and pour it into the wok. Add some pasta water to let the sauce slightly simmer into the noodles.

5. Add a pinch of lime zest before serving, the fragrance of freshness will explode.

6. Eat !
